Antioxidant preservation: Chelating agents are used in food preservation to protect against oxidative degradation caused by metal ions. Metal ions, such as iron and copper, can catalyze oxidation reactions, leading to the deterioration of food quality. Chelating agents like EDTA-Ca sequester these metal ions, preventing their participation in oxidation reactions and extending the shelf life of food products.



Color retention: Chelates are employed to preserve the color stability of food products. Metal ions can react with pigments or natural colorants in food, resulting in color changes or fading. Chelating agents help to chelate metal ions and prevent their interaction with pigments, preserving the desired color of food products.




Antimicrobial activity enhancement: Chelating agents can enhance the antimicrobial activity of preservatives. Some preservatives, such as sodium benzoate or potassium sorbate, are more effective in their dissociated form. Chelates can sequester metal ions that bind to these preservatives, preventing their inactivation and improving their antimicrobial efficacy in food products.


Stabilization of vitamins and antioxidants: Chelates help stabilize vitamins and antioxidants in food products. Metal ions can catalyze the degradation of vitamins and antioxidants, reducing their efficacy over time. Chelating agents sequester these metal ions, protecting vitamins and antioxidants from degradation and preserving their nutritional and functional benefits.


Prevention of rancidity: Chelating agents can prevent rancidity in food products. Rancidity is often caused by the oxidation of fats and oils. Metal ions can accelerate this oxidation process. Chelating agents sequester metal ions, reducing their availability for oxidation reactions and helping to maintain the freshness and quality of food products.

The appropriate selection and use of chelates in food preservation ensure the quality, safety, and extended shelf life of various food products.
